i live just above a mile-high so baked goods can be a challenge here...bought this book to have some kind of reference/resource and have not been disappointed. so far i have made Megan Miller's pumpkin bread, zucchini chocolate cake, banana bread, zucchini bread and strawberry bread (substituted mashed strawberries for bananas, yum).please note: i make a lot of substitutions in my baking, for example...honey and/or maple sugar instead of white/brown sugar, use whole wheat flour for at least half the all purpose flour, use coconut oil (virgin or expeller, depending on if flavor would alter recipe) instead of vegetable oil...recipes still come out great!would highly recommend this book to anyone living at high altitude that wants to bake without major failure.
I live at 8500 ft in elevation in the Colorado Rockies. My Mom could bake up here, but everything I tried to bake fell flat. Then I found this book and am a changed person. The things I bake now come out looking like my Mom's! Problem is, this book seems to be out of print. Amazon managed to get me two copies (I ordered 6) but were unable to supply 4 more new copies. Sigh. I have not found a book on par with this to replace it.
Can't count how many attempts to cook recipes at altitude that had to be thrown out!! Finally some one who understands altitude baking and explains in format one can understand. If you live in mountains or moving soon to mountains this book will pay for it self in a very short time by saving ingredients that would be otherwise be thrown in thrash. Believe me you will be smiling when you open the oven instead of using "those" words.
This book is a great reference for people who bake at high altitudes. I live at about 6600 ft. All of the recipes are researched, tested and there are additional adjustments given for altitudes of 8,000 ft.
What an adjustment for me to move from 900 feet to 9,100 feet altitude! This book got rid of my apprehension of baking failures. I did fail many times before giving up, and then found this great guide to getting my success rate back!
Finally, after 39 years at altitude, I got a recipe that works for the chocolate cake I loved as a child. It was a cake that my aunt would make for me and now I can do it myself. Anxious to try other recipes but the book is worth just this one buttermilk chocolate cake and the frosting was fabulous ...
WOW, is about all i can say about this lil book. Since being moved around by the military, I have finally settled in Utah, at 4500+ feet in altitude. I did not grow up in high altitudes, and no one shared with the me reasons my pastries were a flop, bricked or otherwise pooled in the pan without fail.. this lil book came to me and I have perfected homemade from scratch white bread, wheat bread and french bread. I am a baker, and needed this book.
Having moved to a high altitude state and not ever having to worry about baking before, I found myself at a loss whenever I tried to bake bread or cookies. I found this wonderful book and solved my baking problems.
